I was diagnosed with Charcot Marie Tooth disease—a genetic disorder that affects the nerves in the arms and legs, leading to muscle weakness and atrophy. Suddenly, the path I had envisioned for myself seemed uncertain, shadowed by the looming specter of physical limitations. Yet, even in the face of adversity, my love for cooking burned bright, an unquenchable flame that refused to be extinguished.

 As the years passed and the symptoms of my condition became more pronounced, I knew that my days in a professional kitchen were numbered. The physical demands of the culinary world, the long hours on my feet, and the precise dexterity required for knife work—all were challenges that my body struggled to meet. Yet, despite the inevitability of this reality, I couldn’t imagine a life without cooking. It wasn’t just a career choice or a hobby; it was my calling, my passion, my reason for being. Every chop, every sauté, every dish crafted with care was a labor of love—a testament to my unwavering devotion to the culinary arts.

As I navigated the highs and lows of living with Charcot Marie Tooth disease, cooking became my refuge—a place where my physical limitations melted away, and I was free to express myself through the alchemy of flavors and ingredients.
